Mozart Cream Chocolate Espuma Dreamland Cocktail
Ingredients

For 1 drink

4 cl Cognac (e.g. Remy VSOP)
3 cl Crazy Coffee Cordial*
1 cl Chamboard

Decoration

Raspberry Crumbles
Espuma*

Mixing

Mix all ingredients on ice cubes in a mixing glass and stir with a bar spoon. Put some ice cubes in a cocktail glass and strain the drink into it. Top with Espuma and raspberry crumbles.

INGREDIENTS

300 ml Mozart Cream Chocolate
150 ml raspberry puree

50 g Pro Espuma Cold 

PREPARATION

Stir 300ml Mozart Cream Chocolate with 150ml rasperry puree. Boil up and allow to cool down. Stir in 50g Pro Espuma Cold. Fill in an iSi®-Cream 0.5l bottle. Charge with 2 iSi®-Cream capsules. Store in a cool place for 20 minutes before using for topping on the drink. 

CRAZY COFFEE CORDIAL

Mix and boil up 1l base Cordial with 15 pcs of cardamom pot, 50g coffee beans, 1 pc of vanilla pod and 6g jasmin tea. Evacuate. Sousvide-Cooking for 2 horus at 50 degrees. Filtrate, bottle and chill. 

Base Cordial

Boil up 1l water with 600g sugar, 27g citric acid and 8g malic acid till everything is dissolved.
