Chocolate Plum
For 1 drink
4 cl Whiskey (e.g. Buffalo Trace)
3 cl Plum Cordial*
1 cl Sherry Manzanilla
Espuma*
Mix all ingredients on ice cubes in a mixing glass and stir with a bar spoon. Strain the drink into a cocktail glass and top with Espuma.
*Espuma Chocolate Plum Preparation
500 ml Mozart Dark Chocolate
50 g Pro Espuma Cold
Stir 500ml Mozart Dark Chocolate with 50g Pro Espuma Cold. Fill in an iSi®-Cream 0.5l bottle. Charge with 2 iSi®-Cream capsules. Store in a cool place for 20 minutes before using for topping on the drink.
*Plum Cordial Preparation
Boil up 150g prune with 100ml port wine. Mix with 1l base Cordial und evacuate. Sousvide-Cooking for 2 hours at 50 degrees. Fill up with 500ml red fruits tea. Filtrate, bottle and chill.
Boil up 1l water with 600g sugar, 27g citric acid and 8g malic acid till everything is dissolved.
